Wishing you the joys of Thanksgiving, this is my favorite Holiday.

As we reflect upon His blessings......

His care, His peace, His love, we

may truly know what an

awesome Redeemer we have.

Today, may our thanksgiving
be to God,
for we have been deeply
and richly blessed---
Tomorrow, may our actions
reflect His peace,
for  we have been filled
with His Spirit--
Always, may we allow Him  
to be in control,
for we have been promised
His lasting love.

First, let me tell you how much I like your signature picture. It is very uplifting every time I see it.

It's a shame you don't have Thanksgiving. I think it is a wonderful day to simply set aside, worship God, and enjoy family. Pumpkin pie has a fairly bland flavor unless sugar is added to it. After the sugar is added, it has a very creamy and pleasant flavor. It is usually served in my neck of the woods with either whipped cream or ice cream. It's usually one of several favorite deserts to serve at Thanksgiving. Pecan pie is also very popular. This is one day that we usually forget the calories and eat everything in sight.   Cheesy

If you can get hold of a pumpkin (or a can of it) I can give you a recipe. You've gotta try it.

You are making me hungry just asking these questions. I may not be able to wait until Thanksgiving now. NO CORNBREAD! I thought folks would starve doing without cornbread. Cornbread goes great with everything, even plain with just some melted butter or some honey on the top.

Some may have some other ideas on what the basics are for a Thanksgiving dinner.

Butterball Turkey with giblets left in to make that wonderful giblet gravy that is an absolute must.

Baked ham for variety.

Either a home made stuffing mix or Peperidge Farm stuffing mix with herbs and spices to stuff the bird while it is slow cooking. For larger groups, you will probably have to make more than what will stuff in the bird.

Mashed potatoes that are still just a little bit lumpy with melted cheddar cheese over the top.

Sweet potatoes - I like mine with a touch of cinnamon, clove, and sugar - sliced.

Both kinds of cranberry sauce - gelled and still in berry.

Fresh green salad with the works and dressing.

Fresh fruit salad with everything but the kitchen sink in it - including coconut.

Pumpkin pie with whipped cream.

Hot pecan pie with ice cream.

Cornbread and sourdough biscuits.

Green beans and usually several different types of vegetable casseroles (i.e. broccoli and cheese with cracker crumb crust).

Ice tea, soda pop, and ice cold buttermilk for those who really want to live it up.

By the way, great giblet gravy is a must to put over the stuffing, potatoes, and turkey.

If you survive, you have left overs for supper.

Kiwi, Enjoy!!

This recipe is for pumkin pie made from scratch.

Makes 1 - 9 inch pie
 
Prep Time: 30 Minutes
Cook Time: 1 Hour
Ready in: 1 Hour 30 Minutes

" This pumpkin pie has a walnut, streusel topping that is optional. Serve with whipped topping or ice cream. "
   
Ingredients

Filling:

1 (15 ounce) can pumpkin puree

1 (14 ounce) can sweetened condensed milk

2 egg yolks

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

2 egg whites

1 (9 inch) unbaked pie shell

2 tablespoons all-purpose flour

1/4 cup packed brown sugar

1 teaspoon ground cinnamon

2 tablespoons butter, chilled

1 cup chopped walnuts
 

Directions:

Preheat the oven to 425 degrees F (220 degrees C).

In a large bowl, mix together the pumpkin, sweetened condensed milk, and egg yolks. Stir in 1 teaspoon cinnamon, ginger, nutmeg, and salt. In a large glass or metal bowl, whip egg whites until soft peaks form. Gently fold into pumpkin mixture. Pour filling into pie shell.

Bake for 15 minutes in the preheated oven. While the pie is baking, prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and 1 teaspoon cinnamon. Blend in the cold butter with a fork or pastry blender until the mixture is crumbly. Mix in the chopped nuts. Sprinkle the topping over the pie.

Reduce the heat to 350 degrees F (175 degrees C). Bake an additional 40 minutes, or until set.

Cranberry sauce is the easy part!

Ingredients

4 cups fresh cranberries

1 1/2 cups water

5 whole cloves

5 whole allspice berries

3 cinnamon sticks

2 cups white sugar
 

 Directions

Place fresh cranberries and water in a medium saucepan over medium heat.

Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.

Cook until cranberries begin to burst, about 10 minutes.

Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

Or, for a simpler recipe that I use, just use the water, sugar, and cranberry. Very tasty!
