Ummmmm.....gettin' hongry!!!

Chicken fried snake 'n cream gravy.
Redbone gravy over buttermilk biskits.
Stuffed jalapenos.
Pintos with jalapenos 'n tomatos 'n flour tortillas.
GUACAMOLE!!
Blackeyed peas with fresh snaps 'n bacon 'n jalapenos, and a side of fatback 'n cabbage 'n jalapeno cornbread.
Deep-fried turkey.
Fried cornmeal patties with onion 'n jalapenos.
Home made garlic dills with jalapenos 'n cowhorns.
SALSA!!!!
Frijoles.

My, my...just put on another 20 lbs.  Grin

uhh, you got any stomach left? All those "jalapenos", and what is "fatback"? Deepfried turkey - sounds like a dangerous pasttime...how you get something that big in the deepfryer?

Deep fried turkey is wonderful. You inject it with your seasonings before you drop it in. Most folks let it sit for a day and drink in the flavors. Cajun style is great. WOW!

Yep, plenty of stomach  Grin.........unfortunately, all 38" of it!! Sad

Actually, it's the jalapenos that have made it possible....they burn up all the bad bacteria and other yukkies that eat holes in the lining of the stomach and cause ulcers....you know what they say, "a jalapeno (or 4) a day keeps the doctor away".  Hehehehe.

Fatback is similar to bacon, with more fat and less meat, highly salted and cured. Slice it into strips and use it for seasoning peas, beans and cabbage, or fry it until brown and crisp....usually requires several fryings and drainings.

Turney is fried in a special pot (about a 64 qt. size or larger), with a special rack. After seasoning (injection and rubbing), the turkey is put down in the oil (peanut oil is best, cooks hotter without burning), and left for x minutes based on weight. My, my.....you'll come back for more!!  Check at your local sporting goods store, or Academy, or even Wallyworld. You can usually the fryers. They come with a special stand, and a propane burner. Best to do the cooking outside, too!!

Did I forget to mention I love jalapenos? If you want an interesting treat, pick up some fresh jalapenos. Slice in half and remove the seeds. Lay out on a cookie sheet, salt well (garlic salt is nice), and bake in the oven for 45 min. @ 300.  Remove, place on paper towel to soak up juice, then refrigerate. Mix up some tuna fish with onion, pimentos, and dice in some finely chopped pecans, then stuff the jalapenos with the mixture. Makes a FINE nibbler!!! Smiley

It sounds yummy, but I doubt I could get back into my clothes if I ate too much of that....and I wonder if my heart would rebel at all that oil.... (although peanut oil is good!)

Anything that has the potential to burn off my tongue is not going in my mouth....I like talkin' too much  Grin But I like tuna fish & pecans....maybe I'll try them in a pita.

Welll.......I keep telling myself that since my waist size is the same as it was in high school (50 years ago), and my weight is only 5 lbs more (245) than when I played football, and although my chest has shrunk from 58 to 55 and I've lost a little height from 6'5 to 6'4, that a few more bites won't hurt  Grin Grin Grin........'sides, I only do the fatback 4 or 5 times a year ( or maybe it's 10 or 12  Wink )

...and apparently I am not winning the spelling bees, either, rofl (also, I am sure I wouldn't have enough wind to blow a bugle....hot air, sure, but wind, uhh - I leave that up to my hubby)
