"He that is soon angry deals foolishly: and a man of wicked devices is hated." Proverbs 14:17

"He that is slow to wrath is of great understanding: but he that is hasty of spirit exalts folly." Proverbs 14:29

"The discretion of a man defers his anger; and it is his glory to pass over a transgression." Proverbs 19:11

"Be not hasty in your spirit to be angry: for anger rests in the bosom of fools." Ecclesiastes 7:9

"He that is slow to anger is better than the mighty..." Proverbs 16:32

"A wrathful man stirs up strife: but he that is slow to anger appeases strife." Proverbs 15:18

My favorite is -

Matthew 5:21

21Ye have heard that it was said by them of old time, Thou shalt not kill; and whosoever shall kill shall be in danger of the judgment:  22But I say unto you, That whosoever is angry with his brother without a cause shall be in danger of the judgment: and whosoever shall say to his brother, Raca, shall be in danger of the council: but whosoever shall say, Thou fool, shall be in danger of hell fire.  23Therefore if thou bring thy gift to the altar, and there rememberest that thy brother hath ought against thee; 24Leave there thy gift before the altar, and go thy way; first be reconciled to thy brother, and then come and offer thy gift.

(Not that I don't need to be remind myself once in awhile)
