What exactly does "Christ On Cavalry" mean?  I read the phrase for my religious philiosophy class and I'm not certain as to what it is.

It is not "cavalry". It is:

 "Main Entry: cal·va·ry
Pronunciation: 'kal-v(&-)rE
Function: noun

Etymology: Calvary, the hill near Jerusalem where Jesus was crucified
